Dried Shrimp Mango Salad (Goi Xoai Tom Kho)

Ingredients:

  • 1 green mango

  • 100-200 g of dried shrimps

  • Fish sauce, sugar, garlic, chilies

  • Laska leaves, shallots

Instructions:

Step 1; Peel the mango then wash and shred into small pieces.

Step 2: Chop laska leaves and garlic and 2 chilies finely

Step 3: Chop shallots and fry them till golden brown

Step 4: Mix the ingredients including sugar, fish sauce, chopped chilies and fried shallots together.

Step 5: Soak dried shrimps in warm water for 15 minutes and then leave them dry.

Step 6: If you prefer the stronger taste of shrimp, you can fry shrimp with with garlic, 1 tsp of fish sauce and sugar.

Step 7: Finally, mix the shrimp with green mango, the fish sauce in step 4 and laska leaves together.

Serve with prawn crackers or hot rice.
